If you have been following me on my Facebook page you might know that I am an oatmeal/porridge self confessed addict. I don't think I will ever get bored of it. My oatmeal is never the same, I adjust it to my mood, to the weather, if I am exercising later or not and of course it also varies according to the season. Autumn for me is all about spices such as cinnamon, nutmeg, all spice and pumpkin puree. So today I am sharing with you hearty, tasty and deliciously comforting Baked pumpkin oatmeal using pumpkin puree.
Recipe serves 1 or maybe 2
Ingredients:
½ cup of oats
½ cup pf pumpkin puree
½ cup of pecans
1 ripe banana or 1 apple peeled cored and pureed
Half of apple peeled and diced into small cubes
¼ cup of rice milk or any of your favourite milk
Handful of pumpkin seeds
2 teaspoons of cinnamon
½ teaspoon of nutmeg
Pinch of ginger and pinch of allspice
1 tablespoon of maple syrup ( optional)
Method:
Preheat the oven to 180 degrees.. Soak the oats in bowling water for 10 minutes. Mash up the banana (or if using apple make a puree) and crush the pecans into small chunks. Cut the half of apple into small cubes. Once the water is absorbed and oats are soft, add in the banana(or apple puree), apple cubes, pecans, pumpkin seeds, milk, cinnamon, nutmeg, ginger and all spice. Mix all well together and transfer to your baking dish. All is left is to bake it in the oven for around 20 minutes or until the top is slightly brown. Enjoy loads and loads!
