Good morning! This is going to be a very quick post. This week has been so busy at work , but also on a personal level. On Sunday I am running my first ever marathon and I feel very stressed about it. Well stressed and excited. I have been thinking what to eat for breakfast on the day and probably will end up with my usual porridge.

You know I am a porridge/oatmeal addict, who is always looking for new ideas and inspirations. So today I have come up with something a bit more different and unique than what I have been making in the past. Apple Oatmeal tower. This is perfect post workout bite, snack, breakfast idea or even when the evening cravings start creeping upon you. The kids love it too and so does my partner. It is very satisfying and full of goodness. And no cooking required!

Apple Oatmeal Tower

Recipe

Ingredients:
1 lovely big apple sliced horizontally
1/2 cup of gluten-free oats
2 tbsp of almond butter
2 tbsp of mashed banana or unsweetened apple sauce
1/4 cup of unsweetened almond milk
handful of crushed walnuts ( or any other nuts)
handful of raisins ( or any other dried fruit)

Method:
So simple, all you have to do is mix all ingredients together and spread evenly on each apple slice. Let is set for a few minutes and enjoy!
