I am sure by now you have noticed oatmeal/porridge is my most favourite breakfast. If I could I would have it for lunch and dinner, but one has to watch their food intake and balance it out with other yummy meals. Like these carrot patties or shall I say pancakes?

 

Whatever you want to call it, one thing is for sure…they are tasty and filling and sweet even though there is no refined or added sugar! They are also dairy-free, gluten-free, nut-free, vegetarian and of course vegan friendly.
So how to make them:

Ingredients:
1 cup of finely grated carrot
1/2 cup of gluten-free oats or normal oats
1/3 cup of rice milk or any of your favourite milk
now for vegetarian option you use 1 egg
for vegan option 1/4 cup of ground flax seeds mixed with 1/4 cup of water
1 tsp of baking powder
1 tsp of cinnamon
vanilla extract
sprinkle of nutmeg
coconut oil for frying

Process:
If you are going the vegan way mix water with flax seeds and leave to rest on the side. Get a bowl and mix oats with baking powder first. Add whisked egg or flax seeds egg, carrot, milk, cinnamon, vanilla extract, and tiny bit of nutmeg.
Fry gently in coconut oil on both sides until brown and serve with  you favourite topping. Enjoy loads and loads
