There is something rather comforting about the sound of chocolate mug cake. Maybe it is because the words chocolate and mug make us think of something warm, comforting and delicious. Yes, and this is exactly what this 5 minute cake in a mug is. Perfect for breakfast, quick after school treat for your kids or even a late night treat for you . This, like all other cakes-in-mug, is a no-churn affair. You mix everything together, pour it into a mug, microwave and you are done. I like this with a few raspberries to tumble around and almond butter over it.
Chocolate Mug Cake - serves 1
Ingredients:
4 tablespoons whole wheat flour
2 tablespoons of raw cacao powder
1 - 2 tablespoons of date syrup or any of your favourite sweetener
¼ cup of mashed banana or unsweetened apple sauce
3 tablespoons of unsweetened almond milk
½ teaspoon baking powder
Sprinkle of cinnamon
1 teaspoon of vanilla extract
Method:
Get a small bowl and mix flour, raw cacao powder, baking powder and cinnamon together. In another bowl combine ¼ cup of mashed banana or applesauce, almond milk, and vanilla extract. Pour wet ingredients into dry ingredients and combine well. If need be add another 1-2 tablespoons of banana or applesauce to ensure batter is wet and looks like a regular cake batter. Pour batter into a mug, and microwave for two to three minutes.Enjoy loads!

This looks good. Have you tried it with almond or coconut flour? Can agave nectar, honey, or maple syrup be used in place of the brown rice syrup?

Heather, I wouldn't use coconut flour as coconut flour is more dense and the bread wouldnt turn good. Almond flour could work though. With regards to sweetener you can use any you like, just stick to the amount 🙂 Let me know if you have made the bread and if you liked it. Lots of love, Hedi xxx
