Some likes brunettes, but I like blondies and even more when it is clean chocolate blondies. When I first came to England (10 years ago!!) and got offered blondies (as you can imagine, the opposite of brownies) I had no clue what they were and what to expect. To be honest I didn't even really like them that much. But hey you know me, it wouldn't be me if I didn't try to have a go at my own clean and healthy blondies version.
If you find it tough to stick to your healthy diet, these should sort you out. They are moist, spongy and with a bit of chocolate kick. The traditional blondies recipe consists of sugar, butter and white flour , but I used simple oats, Wholegrain Spelt Flour, Biona Organic Coconut Milk, Cocoa Nibs and Organic Coconut Sugar. I know you just heard the word sugar, but coconut sugar has a low glycaemic index of 35, which means no spikes in your blood sugar levels and is full of amino acids and electrolytes. These are all great ingredients, but remember your body doesn't metabolise food as well at night, so avoid munching at these late in the day.

Clean chocolate blondies
Clean chocolate blondies recipe from Hedi Hearts Clean Eating. This clean eating is not all about kale and chia seeds, is it? Enter for recipe!
Ingredients
- 2.5 cups oats
- 1 cup spelt flour (buckwheat flour will work too)
- 1 teaspoon baking powder
- 1 whole tin coconut milk (make sure no additives, chemicals or sugar are added)
- ½ cup coconut butter or coconut oil, melted
- ½ cup coconut sugar (you can use liquid sweetener instead such as brown rice syrup)
- ½ - ¾ cup cacao nibs
- 1 tablespoon ground flax seeds mixed with 3 tablespoon of water, let sit for 10 min
Instructions
- Preheat oven to 180 degrees and line your baking tray with baking paper.
- Combine the oats, spelt flour and baking powder in a bowl.
- In another bowl whisk the coconut butter with coconut milk and coconut sugar.
- Mix both bowls together and when these are well mixed add in the flax seeds and fold in the chocolate nibs
- Dollop this thick batter into your prepared baking tray and spread out evenly. Bake in the oven for 35 to 40 minutes maximum. It should have slightly brown colour.
- Leave it to cool down completely before devouring

Could I use maple syrup to sweeten? How much would I need so as to not alter the texture? I have been clean eating for two weeks now and have just got my hands on some spelt flour and have been looking forward to doing a bit of clean baking. This site is awesome!
