When I was a little girl, I would always eat cookie dough. Now that I am a big girl, I always eat cookie dough 🙂 The difference now is that mine has no raw eggs or other ingredients that might not be the best for you. Today I am sharing my clean eating cookie dough ball recipe.
Last weekend, I was at the Love Natural Love You show. It was such a great day. I demonstrated a chocolate brownie recipe in the Nature’s Workshop kitchen, spent 30 minutes in the theatre talking about how to eat healthily on a budget, and the last workshop of the day was as a guest chef in the Doves Farm kitchen making 3 different recipes using the same ingredients.
They were my breakfast pizza, healthy breakfast bars and oatmeal cookies. All of these yummy recipes call out for the same 2 basic ingredients. Check the recipes out, they are bang on budget and the flavours and textures will pleasantly surprise you.
Now, back to my cookie dough ball recipe. As with all my recipes, it is a very simple one and I am sure you have all of the ingredients in the kitchen cupboard. You need a tin of chickpeas (no salt or sugar added), cashew nut butter, ground almonds, vanilla extract and maple syrup. Or honey if you are not bothered about having it all plant-based. If you are allergic to nuts, replace cashew nut butter with tahini, ground almonds with hemp seeds or even desiccated coconut. I have used my Bamix food processor, but you can use a blender too!.

Clean eating cookie dough ball recipe
Ingredients
- 1 tin chickpeas, drained
- ½ cup cashew nut butter
- ½ cup ground almonds
- 1 tablespoon maple syrup or any other sweetener.
- 1 teaspoon vanilla extract
- Optional: ¼ cup dark chocolate chips
Instructions
- Place the chickpeas into your blender and pulse until crumbly.
- Next, add all of the remaining ingredients and process until well combined.
- Form approximately 15 balls and place them on a tray.
- Place in the fridge for an hour to set.
- Devour!
How simple is this clean eating cookie dough ball recipe? These yummy balls will last you for up to 5 days in the fridge in an airtight container or, for a month in the freezer.
