The summer has finally arrived in Essex! Wohooo! This week is meant to be a heatwave in UK, so get your bikini and speedos ready ladies and gentlemen because knowing the UK, this is not going to last long! Today’s recipe is for clean eating freekeh salad with strawberry vinaigrette.
The season of PYO (pick your own) strawberries is in full swing and this weekend, I took my little Sofia to my local farm to get a basket or two. Little did I expect that we were going to walk off with 4 massive baskets, 4 punnets and full tummies too! First, I made my easy strawberry cake which Sofia will take for her school fete tomorrow. Then I discovered a spare bag of freekeh in my cupboard and thought to myself that I needed to make a dish involving freekeh and strawberries. You see the way my recipes come about is literally whatever I find in my cupboards 🙂 Not a much of a traditional chef am I?! I just don’t have time with 2 kids and a full time job to spend lots of time or fortune on fancy ingredients… well, at least not most of the time.
Ok let’s go back to my clean eating freekeh salad with strawberry vinaigrette. The vinaigrette is gorgeous! I can actually imagine it being poured over any salad or maybe, even over ice cream. It is zesty, sweet and takes the salad up a notch. You can use it cold or warm, either way tastes lovely.
A side note for you… if you don’t have freekeh, you could substitute with quinoa or brown rice. Also, you could cook freekeh the night before, place it in the fridge and mix it with the rest of the ingredients when you get home after work the next day.

Clean eating freekeh salad with strawberry vinaigrette recipe
Ingredients
- 1 cup freekeh
- 2 cups stock (I used Kallo)
- 1 can chickpeas, no salt or anything else added
- 3 stalks celery, sliced
- ½ cup strawberries, sliced
- Salt and pepper
- Vinaigrette
- ½ cup strawberries
- Juice from 1 lime or lemon
- 1 tablespoon maple syrup or any of your favourite healthy sweetener
- 1 tablespoon apple cider vinegar
- 1 tablespoon extra virgin olive oil
- Salt and pepper
Instructions
- Place the freekeh into a pot and cover with vegetable stock.
- Cook on low heat for about 35 minutes or until the grains are soft.
- Let it cool down and then mix with the chickpeas, celery and strawberries.
- Season to taste and set aside.
- For the strawberry vinaigrette, place all of the ingredients into a blender and blend until smooth.
- Serve the freekeh salad on a deep plate, drizzled with strawberry vinaigrette and enjoy.
