Put your hand up if you like snickers? If your hand is not up at this point, you can just leave, because today I am sharing my clean eating snickers cake. After the tremendous success of my bounty cake I knew what had to be done and healthy the snickers cake was born.
There is a problem though! My partner says it doesn't taste like snickers! Well it does to me and donβt know what else to call it rather than snickers cake.
And because he said that he is not having any more. I will quite happily scoff this all by myself and the rest will be hidden in the freezer.
This is really an easy cake to make and has everything you love about Snickers bars including the caramel and all the chocolate.
I found the trickiest part when it came to re- creating the caramel flavour that normal snickers bars have, but then called upon my friends, Medjool dates, and the problem was resolved.
If you are going to use normal dates you will be fine too, however the flavour and taste might not be as caramel(y) or sticky.
The best cake tin to use is a silicon one. It will be easier to take the cake out once finished. If you think you might struggle, line the tin with baking paper.

Clean snickers cake
Clean eating snickers cake recipe which is healthy, dairy free, gluten free and taste amazing? You have come to the right place.
Ingredients
- Base:
- 1 cup walnuts or almonds
- 1 cup desiccated coconut or coconut flour will work too
- 3 tablespoon coconut oil
- 2 tablespoon cacao or 3 tablespoon cocoa powder
- Caramel ingredients:
- 15 medjool dates, pitted (or 2 cups normal dates)
- 2-3 tablespoon water
- 1 tablespoon almond butter (if no almond butter in the house use coconut oil, not melted)
- Pinch of salt
- 1 teaspoon vanilla extract
- 1 cup raw peanuts (not roasted or salted)
- Chocolate layer
- Raw chocolate bar (cca 50 gr, you could also use dark chocolate chips, but watch the sugar content)
- Splash coconut milk or any other milk you might have
Instructions
- First the base. In a food processor whiz all the ingredients for the base until well incorporated. Transfer into your cake tin and press down firmly ensuring the bottom of the cake tin is evenly covered.
- Place in the freezer to set
- Next up is the caramel. Soak the dates for 30 minutes in hot water. Once soaked combine with water, salt, almond butter and vanilla in a blender until smooth and creamy. You will need to scrape down the sides of the blender a few times to make sure the caramel is blended equally.
- Once smooth, spread the caramel over the cake base and sprinkle with peanuts. Pop in the freezer to set
- Last but not least is the chocolate layer which is made by melting the chocolate with a splash of the milk. Pour the melted chocolate over the nuts and spread to evenly cover. Place in the freezer for 10 minutes until the top chocolate hardens.
Now that you have seen the recipe, how close is this clean eating snickers cake to the real thing? I would say pretty close, yet you donβt have any of the βnot so healthyβ ingredients.
