Beans are just an amazing superfood, where nutrition meets minerals and vitamins and creates slow releasing energy which makes you feel fuller for longer. They are the perfect ingredient for many savoury dishes, superfood salads, chilli and soups.
Packed with vitamins, minerals and dietary fibre, they are low in fat, high in potassium, iron and magnesium and they help to lower your cholesterol. Mixed tinned beans are the best not only because it is all in one tin with just added water, but it saves you time and effort of opening four different tins.
You might argue that fresh beans are better and that the canning process reduces the level of vitamins and minerals, but canned beans still contain a decent amount of nutrients, so don’t feel bad for using them.. For this clean eating superfood salad recipe I used a mix of red kidney beans, giant white beans, chick peas (also known as garbanzo) and cannellini beans, but feel free to use whatever you find in your cupboards, just make sure they have nothing added. The next ingredient is cauliflower, which is another great natural superfood for a few pence. Last but not the least are almond flakes and rocket, which can be replaced with any other nuts and green veg. The creamy dressing is made with peanut butter, but if nuts are not your thing use tahini aka hulled sesame seeds as an alternative. All in all this lunch will not cost you more than 3 pounds and will serve 3-4 hungry bellies! Clean eating doesn’t get cheaper than this!

Clean eating superfood salad
Clean eating superfood salad recipe which takes 10 minutes to make and 10 seconds to eat! Budget friendly too!
Ingredients
- 2 tins of mixed beans (make sure nothing is added apart from water)
- 1 small cauliflower (steam it, grill it, cook it, make it the way you like it)
- 2 handful rocket ( if you don't have rocket use spinach)
- Flaked almonds
- 1 handful coriander (optional)
- Dressing recipe:
- 4 tablespoon creamy peanut butter
- Juice from 2 lemons
- 1 tablespoon tamari soya sauce
- 1 tbs apple cider vinegar
- 2 teaspoon soy sauce
- 1 tablespoon date syrup ( or you can use honey, brown rice syrup)
- 3- 4 tablespoon water ( taste and adjust to your own preference)
- Salt and pepper
Instructions
- Drain the water from the tins and place beans mixture into a big bowl.
- If you have time pop the flaked almonds into the oven and give them a bit of charred colour.
- For the cauliflower I steamed it, but you could boil it, grill it, fry it with some spices or leave it raw before adding to the beans mixture.
- Next add in the rocket and flaked almonds and give it a good mixture
- For dressing: whisk all dressing ingredients until creamy and pour over salad before serving. Any leftover dressing will keep in the fridge for about two weeks.
