Clean white chocolate, yes you heard it white chocolate!
But before we get on to the recipe I would like to clarify something. Recently I had a couple of comments regarding this recipe and that it cannot be clean. The reason being because cacao butter is processed, brown rice syrup is processed, nut butters and raw cacao are also processed… but I disagree with this view to a certain point. Yes these are processed, but so is your chicken and meat you buy at the butchers, so are the apples you buy in supermarkets and so are the raw cashew nuts sold in health shops . Unless you take it straight off the tree or from the ground in your own garden, every single item you see in your supermarket has gone through some kind of process. Even cutting, washing and cooking your veggies is a process.
My mission is to help you be informed and know how to read labels, how to choose more healthy, less process items, but not that everyday food items are dirty, not clean and toxic. It’s all about balance and you need to know that.
Not everyone is going to agree with me and that's fine. I get that not everyone has to agree on everything all of the time (what a boring world that would be).
To live a 100% clean life you would have to eat only fruit , vegetables, nuts and seeds, which I personally wouldn't mind because I love fruit and veg, but a lot of people would find this a bit extreme. Therefore to eat clean and not go over the top, make the best choices when it comes to ingredients. This is the way I do it. I buy raw coconut oil, I buy the best cacao butter etc. I use brown rice syrup over golden syrup or sugar, I could go on for ages of course. It is up to you how clean you want to be , but the recipes I am sharing are perfect for me, my family and friends. I want to eat clean, but I also want to live life and enjoy a treat every now and then. It is all about moderation and portion control.
Ok, now time for the recipe. I got inspired by Chocolate Covered Katie, her recipes are amazing and so is her blog. To take this recipe up a notch I added a chocolate filling…no it is not real chocolate, it is cashew nut butter mixed with cacao and a touch of maple syrup or your favourite sweetener. You have to be quick because the cacao butter hardens very fast. The best cacao butter is Ecuadorian butter but any Raw Organic Cacao Butter will be equally good. One thing you will love while making this recipe is the smell in your house, you will feel you have been transferred to a French chocolaterie or patisserie. Surprisingly when you melt the cacao butter it has no taste , but the smell..OH SO DELICIOUS. I have used cashew nut butter, but for those of you who sadly have nuts allergies use tahini instead (hulled sesame seeds) or pumpkin butter (a very particular taste, so taste it first if you can before buying)

Clean white chocolate cups with chocolate filling
Clean white chocolate cups with chocolate filling recipe from Hedi Hearts.
Ingredients
- For the cups:
- ½ cup or 110 gr cacao butter (the best one is Ecuadorian)
- 1 tablespoon maple syrup, brown rice syrup or date syrup
- 1 tablespoon protein powder (I used Sunwarrior vanilla, but you can use your favourite one)
- Pinch of salt
- Chocolate filling:
- 1 tablespoon of your favourite nut butter (I used cashew butter)
- 1 teaspoon raw cacao or cocoa powder
- 1 teaspoon maple syrup, brown rice or date syrup
Instructions
- For the cups:
- Get the cupcake molds ready, you will have to be quick now.
- Place the cacao butter into a heatproof bowl, place over a pan of hot water and allow the butter to melt.
- Once melted stir in the maple syrup and protein powder and mix well ensuring there are no lumps. Pour half of the mixture into your molds and place the molds into the freezer to set for a couple of minutes.
- Place the remaining melted butter back in the pot with hot water to make sure it doesn't harden.
- In the meantime mix peanut butter, cacao and maple syrup to create the chocolate filling
- Now, take the molds out of the freezer and divide the chocolate mixture equally into each mold. Pour over the remaining melted butter mixture and place in the fridge to set for an hour.
As I said eat in moderation, eat one piece and keep the rest in the freezer.
Much love,
Hedi
