Clean eating rocky road recipe

  • 1 cup tahini or any nut butter
  • 1 cup roasted buckwheat (you could also use puffed rice)
  • ½ cup raw cacao butter (you can use coconut oil but keep it in the freezer)
  • ½ cup raw cacao or cocoa powder
  • ⅓ cup date nectar
  • 1 cup cranberries
  • 1 cup crushed pistachios
  • ⅓ cup crushed walnuts
  • ½ cup desiccated coconut
  • Pinch of salt
  1. Get a glass bowl over a pot of boiling water and melt the raw cacao butter first.
  2. Take off the heat and mix in the cacao, date nectar, cacao butter and salt together.
  3. Mix in the nut butter until smooth.
  4. Add in the buckwheat ( or puffed rice) cranberries, pistachios, walnuts and desiccated coconut
  5. Tip the mixture into a baking paper lined square dish and chill until firm.
  6. Once firm slice into bars and devour
