I know it's a bit early for Valentine's Day, but you can never have enough treats and being prepared is not bad either! This recipe gets my heart racing because it contains my favourite strawberries and white yogurt. It’s also light, pretty and great for sharing with the people you love. You can make it anytime and I thought this pretty colour would be the perfect Valentine’s treat. So if you really can’t bring yourself to buy another card and box of sugar loaded chocolates, give these lovely guilt- free pleasures a go. They are far more tasty, festive and exciting than shop bought box of chocolates!
Inspiration from Pop Sugar
Ingredients:
1 cup your favourite white yogurt (I used Provamel)
1 cup mixed strawberries and raspberries
1 teaspoon vanilla extract or a good grind of vanilla beans
1 teaspoon coconut sugar (optional) (I used Coconut Merchant)
Handful of raw cacao nibs (I used Atreea)
Method:
Mix yogurt with the vanilla extract and fill your cupcake pots halfway. Blend the strawberries and raspberries with coconut sugar in your food processor (or blender) and add on the top of the yogurt. Pop a small amount of yogurt on the top and sprinkle over a few raw cacao nibs. Pop the cupcakes in the freezer to set. After an hour remove from the freezer, allow to thaw and devour! Just a small tip, if you are using frozen fruits add a splash of your favourite milk so it blends easily.
