I love making this simple yogurt parfait recipe, because it is such an elegant dessert that is simple to make but looks and tastes like it took all day. A huge crowd pleaser, so if you are having a dinner party and you want to impress yet stay healthy this delicious dessert with its layers of lemony yogurt, fresh fruits and sprinkled with raw cacao nibs is destined to please. Also this is a great breakfast option too!
I have picked strawberries, kiwi and raspberries, but you can substitute with blackberries, banana slices, or any fruit of your choice. Make sure you serve it in a clear glass to show off the lovely layers and get the mouths of your guests watering. This healthy yogurt parfait recipe is for 2, but is easy to adjust for more.
Yogurt parfait recipe
Ingredients:
1 pot of white yogurt ( I used Provamel soya with zero added sugar)
Juice from half a lemon
⅓ cup of puffed quinoa ( you can use puffed rice too)
Handful of strawberries
Handful of kiwi
Handful of gluten-free oats
Handful of raspberries
Brown rice syrup
Raw cacao nibs
Method:
First chop up all the fruit and mix yogurt with lemon juice. Get a nice tall glass and start layering. First strawberries, then spoon in the yogurt followed by a drizzle of brown rice syrup. Next up is puffed quinoa and kiwi with another layer of yogurt and drizzle of brown rice syrup. Finish with oats and raspberries on the top sprinkled with a few raw cacao nibs. Let set in the fridge for an hour and devour.
