Did you know this week is National Chocolate Week? Well now you know. To be honest for me any excuse to have a piece of chocolate will do. But! This one is much healthier than any other shop-bought versions and tastes equally as nice, if not better! Cadbury is sooo last year... actually who is Cadbury ?? The best bit is you only need 3-ingredients and then almonds, hazelnuts,raisins or any other dried fruits, nuts and seeds that you would like to have in the chocolate. One of the ingredients is raw cocoa. I often get asked what is the difference between raw cacao and cocoa. Cocoa does look the same, but trust me it’s not. Cocoa powder is raw cacao that’s been roasted at high temperatures. Unfortunately, roasting changes the molecular structure of the cocoa bean, reducing the enzyme content and lowering the overall nutritional value. You can use both, but if you can always go for the raw version which has the most nutrients.
The second ingredient is coconut oil. One of the healthy benefits of coconut oil is it helps to speed up your metabolism which means not only can you have a piece or two, you even burn some fat! Sounds to good to be true. But please remember always eat with moderation!
Recipe
Ingredients:
¼ cup of melted raw organic coconut oil
1 heaped tablespoon of raw cacao or cocoa
Dash of coconut milk (you can even use the tinned version) – This is optional
Sweetener to taste. I used brown rice syrup , but you could go with honey, maple syrup or coconut sugar
1 Handful of almonds, multi-coloured raisins and hazelnuts
Method:
Gently melt the coconut oil on a very low heat, add cocoa and stir until smooth. Pour into a small dish lined with baking paper. Put all your nuts in a small plastic bag and bash a few times to crush them. Once crushed sprinkle them along with raisins on to the chocolate mixture and place in the freezer for 10-15 mins. Make sure it stays flat. Once frozen break into pieces and enjoy in moderation.

Hello Leanne, you can leave it in tr freezer as long as you like. Just remember to take it out 15 min before eating and allowing it to thaw. Hedi xxx

Hello Tara, I buy from loads of different brands, I love BuyWholeFoodsOnline, Beleafinnature, CreativeFoods and many more. Always buy raw cacao rather then cocoa powder which is more processed. Hedi xx
