It’s Friday!!!! Yay!! I am on my way to work with a big smile on my face. Why? Because my belly is full of absolutely delicious mango, banana and chia goodness. Yep, I am that simple, food makes me happy.

 

Here is the recipe, I am off for my morning run.

Ingredients:
2 tbsp of chia seeds
3 tbsp of gluten free oats
1 cup of almond milk
1 tsp of vanilla extract or 1 vanilla pod
Sweetener to taste (optional)
1/2 of mango ( the more ripe the better)
1 very ripe banana
1 fresh fig
1/2 cup of frozen blackberries or any other fruit
Method
Mix chia seeds, oats, vanilla and milk together in the jar. You can add a bit of your favourite sweetener if you like. Pop it in the fridge. After 15 min mix it and put back in the fridge to set for 1 hour.
In the meantime blend mango and banana until completely smooth with no lumps. Slip up fresh fig.
Now take the jar with chia mixture and press 3 slices of fig inside against the jar wall. Pour in slowly the banana and mango blend and top up with frozen or fresh blackberries. Put back in the fridge and in the morning enjoy loads and loads
