No bake almond and banana cupcakesI am not a huge XFactor fan, so when I switched on the TV on Saturday evening and saw Simon Cowell’s face I knew what I had to do…. check my fridge to see what I could make to satisfy my everlasting sweet tooth. Last few months I have been really into raw food, especially salad lunches and raw treats aka stuffing my face with delicious “oh so healthy” cakes.

Here is what came out, not bad I say!

Ok, here is the recipe :
Ingredients:
BASE:
1/2 cup of almonds
1/2 cup of dates
1/4 cup of gluten-free oats
3/4 cup of desiccated coconut
1 tsp of vanilla extract

TOPPING:
2 very ripe bananas
1/2 cup of coconut oil ( no need to melt)
1/2 cup of Brazil nuts
2 tbsp of almond butter
1 tsp of vanilla extract

Method:
BASE:
Soak the dates in warm water for 15 min. Then start by placing almonds into your food processor. It doesn’t have to be flour consistency, just nicely grounded. Add the rest of the ingredients and combine very well. Now get cupcake forms and fill them half way through with the mixture. Press down firmly and set aside.

TOPPING:
Start by processing the Brazil nuts until flour like consistency. Add rest of the ingredients in and process until smooth. Make sure there are no lumps. Scoop the filling onto the crust and place the cupcakes into the freezer for minimum an hour. Enjoy loads and loads. You can keep them in the fridge or freezer. As expected I couldn’t wait the whole hour before tasting one. The result is : really delicious!
