Today is National Fitness day in the UK. Not sure what exactly is behind it, but I will happily jump aboard and take part. Well I already did. I had an amazing HIIT session in the gym and then celebrated with this gorgeous, delicious and very satisfying smoothie. I call it Rainbow smoothie because of all the beautiful colours. I almost felt bad eating it…only for a couple of seconds though 🙂

First you will have to create each layer. Make it the night before to save time and also to allow each layer set nicely.

Chia layer:
2 tbsp of chia seeds, 3/4 cup of coconut or any other plant based milk. Mix all together and pop in the fridge. After 15 min take it out and stir to avoid lumps. Put back in the fridge to set overnight.

Mango layer:
Just simply cut up your mango into small pieces and blend with your blender

Chocolate layer:
1/3 cup of oats, 1 tbsp of raw cacao , 3/4 cup of plant based milk and little bit of maple syrup. Mix it all together and put in the fridge to set overnight

Dragon fruit layer:
Simply cut up your dragon fruit and blend with your blender. If you don’t have dragon fruit you can use any other fruit such as pineapple, pear or even apple.

Kiwi layer:
Peel your kiwi and blend with your blender

In the morning pour each of the layers in to a medium size glass…. very carefully, I used a small spoon. This way you will avoid mixing all layers together. Top up with goji-berries, desiccated coconut, or hemp seeds.
All is left is enjoy!
