I simply believe that eating clean and healthy doesn't mean giving up indulging and treating yourself, so let me introduce you to raw dessert recipes. Raw desserts are the best. I know this is a big statement, but in my book they are. Not only are they very tasty, but they are good for you and full of nutrients compared to normal cooked cakes and desserts.
Raw food, also called living foods is basically unprocessed, uncooked fruits and vegetables, or slightly heated as long as it doesn't go over 45 degrees celcius (115 degrees farenheight). It has several benefits, so let me just quickly list them for you. Believe me after you read them you will enjoy these delicious triangles even more.
1. Raw desserts are made from plant-based foods only, ideally organic depending on your budget. This means no gluten and dairy which are used in most traditional dessert recipes and are among the most common food allergies causing bloating or gas issues.
2. Raw desserts are vibrant and delicious creations and high in nutrients thanks to using whole foods with its all vitamins, minerals and other nutrients. You will not find in them any white flour, refined sugar, preservatives or artificial vitamins.
3. Raw desserts are not cooked, fried or baked so no need for bulking or raising agents.
4. Raw desserts are simple, quick and easy to make, no danger of overheating or over-mixing. Children love making them and getting creative. They are fool-proof.
5. Most raw desserts can be made using a food processor or a blender, so no major aftermath and no cleaning required.
You ready for the recipe? Don't get me wrong, they are still desserts and should be eaten in moderation, but you can enjoy a piece or two absolutely guilt-free .
One more thing, you can turn these triangles in to fudge. Just skip the base and make the topping alone. It may seems like a lot of ingredients, but believe me these are so worthy, and absolutely gorgeous.Recipe (skip the base if you making fudge only)
Base:
½ cup pitted dates (soaked in warm water for 5 mins)
½ cup desiccated coconut
1 cup of nuts (I used peanut meal from the Funky Nut Company, thanks Julian!)
¼ cup of melted cacao butter
Put all ingredients into food processor and pulse until well combined. Press the mixture into a square dish and pop it in the freezer to set
Topping or fudge:
1 cup dates ( soaked in warm water for 5 mins)
2 cup of walnuts
2 cups of peanut meal (finely ground peanuts) Hazelnuts will also work beautifully in this recipe
½ cup cacao or cocoa powder
¼ cup maple syrup or any other sweetener
½ cup melted coconut oil
½ cup melted cacao butter
pinch of salt
Place all the ingredients into a food processor and blend until no big chunks are left and you have a creamy consistency. Pour onto base, sprinkle with crushed walnuts and refrigerate until firm. I usually store mine in the freezer because they will keep for longer there. I just take one out and let it thaw for a few minutes so it's not so intensely cold. Devour!
