Good morning! Yesterday I posted a photo of my breakfast Strawberry Overnight Oats jar and got so many lovely comments and likes, so here is the recipe for you. Believe me this is no ordinary breakfast, but breakfast that will give you some super powers. Let’s just quickly look at the ingredients and their tremendous health benefits:
Oats – great source of fibre, help to lower you cholesterol and blood pressure, reduce risk of getting cancer, make you feel full longer which helps with weight loss and keep your blood sugar levels in control and stabilized.
Almonds aka almond milk – this high protein goodies are one of the healthiest , if not the best nuts packed with calcium, magnesium, potassium and vitamin E, which is great for your skin and hair. They lower the rise in blood sugar and ‘bad’ cholesterol, reduce heart attack risk as well as promote gastrointestinal health and even help to fight diabetes.
Strawberries – apart from looking amazing and tasting amazing they are little red powerhouses full of vitamins C and K , folic acid, manganese and potassium. They are low in calories, high in fibre, help to lower cardiovascular disease, have anti-aging properties and guard against cancer.
Now time for the recipe:
½ cup of gluten – free oats ( you can use normal oats too)
1 cup of your favourite plant based milk (I use unsweetened almond milk or coconut milk)
1 cup of strawberries
1/3 cup of soya yogurt ( you can use Greek yogurt if you like)
Sprinkle of raw cocoa nibs
½ scoop of protein powder (optional)
Now find in the house a nice jar, not too small, not too big. Mix oats with milk and protein powder and pour it in the jar. You can add sweetener if you like, such as honey, agave or maple syrup. In the morning the oats mixture should be fully soaked up and thick. Slice up thinly and vertically couple of strawberries and put them in the jar pressing gently against the jar wall. You should fit in ( depending on how big or small your jar is) between 5-6 slices. Chop up the rest of your strawberries and sprinkle half of them on the oats. Pour in the soya yogurt and top up with more strawberries and raw cocoa nibs. Voila , you are done. Enjoy loads and loads!
