Hello, hello summer!! You have well and truly arrived..well at least here in Essex. What a better way to celebrate summer and all it has to offer with this delightful watermelon bruschetta recipe.
Don’t you think watermelon bruschetta recipe sounds rather posh? I do, but between me and you it’s a salad made with watermelon, avocado, feta, some seasoning all dropped on piece of toasted bread. It might sound like nothing special but I don’t exaggerate when I say you will fall in love with this recipe. If feta doesn’t tickle your fancy go for mozzarella, it works equally well especially if you add few chopped leaves of fresh mint. The cheese should be grated or crumbled. I love love my Deiss grater, it is incredible and is much more than a grater, you can use it for parmesan, lemon, ginger, garlic, nutmeg, chocolate or any vegetables and fruit. As far as bread goes you could use either my wholemeal loaf and this gorgeous spelt bread, but any of your bread will do. Make sure it is well toasted; the crunch of the toasted bread and the juicy watermelon is the best marriage! Other nice additions to this watermelon bruschetta could be black or green olives, capers or even sliced artichokes would “zhuzh it up”.
Here’s the watermelon bruschetta recipe
- 1 cup chopped and deseeded watermelon
- ½ avocado, cubed
- ⅓ feta, grated or crumbled
- Juice from half a lemon
- Black pepper and salt for seasoning
- Few slices of toasted bread
- Get a bowl and mix all the ingredients well together (excluding the bread)
- Taste and adjust seasoning by adding more lemon juice or salt and pepper
- Top up generously each slice of bread with the watermelon mixture and devour immediately
