I get so many requests to create healthy, zero carbs and no sugar biscuits. This is not an easy task you know my dear readers, because if you look into it deeper you realise everything contains sugar even the healthier options such as maple syrup, agave or my firm cupboard staple sweeteners like dates and bananas.
But you have asked for no sugar biscuits, so I have created almond and chia savoury biscuits. Not even a gram of sugar, but crammed with loads of protein and healthy fats! With the crumbly character, they have garnered praises from my family and friends, so here I am with the recipe… I can’t believe how EASY they are to make, not to mention you don’t destroy your kitchen making them and you don't feel guilty eating them.
Ingredients:
1 cup almond butter ( make sure the only ingredients are almonds and salt)
¼ cup of chia seeds
¼ cup of cold water
1 tsp. baking soda (optional, but I do add it to help increase in volume and lighten the texture)
Generous sprinkle of pink Himalayan salt and pepper
Method:
Pre heat oven to 180c. Combine water and chia seeds together and let sit for a few minutes. Once thicken get a bowl and mix the chia mixture with almond butter until well combined. Drop biscuit dough into 1-tbsp plops on a baking tray lined with baking paper and push an almond in the middle. Bake for 10 minutes and let cool completely before transferring in an airtight container. Enjoy!
