Somebody asked me the other day how did 'Hedi hearts' come about, and my honest answer is I got frustrated by the lack of vegan treats, desserts and cake options in most of the supermarkets and shops, so decided to take matters into my own hands and so gave birth to 'Hedi Hearts'. Why 'Hedi Hearts'? Well my name is Hedi and this blog is about all the things that my heart desires. And at the moment it desires healthy chocolate bar recipe.

    Healthy chocolate bar recipe

    Inspiration is crucial to us recipe and healthy bloggers. Thankfully, these days there are plenty of creative and exciting sources to choose from. Pinterest and Instagram are the biggest two for me when it comes to recipe creations and drooling over food pictures and they are just literally a click away. Pinterest is where I found this recipe and it wouldn’t be me if I didn’t put my own stamp on it. This healthy chocolate bar recipe reminds of something, but I just can’t put my finger on it. I also love the texture, thick and chunky, like your favourite bar of chocolate and when I bite into it, a large piece always seems to drop into my mouth, as I let it melt in my mouth slowly. This, my dear readers, is called mindful eating aka enjoying every single bit and beyond.

    An easy, no bake, healthy chocolate bar recipe that tastes great and is loaded with with fiber, antioxidants, healthy fats and protein.

    We all want healthy chocolate bar recipe that will satisfy our sweet tooth without feeling guilty, don't we?

    Ingredients

    • 1 cup almond butter (works beautifully with cashew nut butter too)
    • ⅓ cup brown rice syrup
    • ½ cup coconut butter (I used Coconut Merchant butter)
    • 2 cups of oats
    • 1 cup desiccated coconut (I used Coconut Merchant)
    • 3-4 tsp of raw cacao or cocoa powder depending how rich you want it to be
    • Chocolate topping
    • ⅓ cup raw chocolate or dark chocolate chips (check the refined sugars and nasties, not all of them are clean)
    • ¼ cup unsweetened almond milk (I used Provamel)

    Instructions

    1. Get a pan and on a low heat melt the almond butter, coconut butter , rice syrup and vanilla extract. Once melted add the raw cacao. Combine well and set aside.
    2. Next get a bowl and mix oats with desiccated coconut. Pour in the almond butter mixture and mix well so all the oats are moist and covered.
    3. Place the mixture in a freezer safe dish. If you like these bars to be thicker get a smaller dish, for a thinner version pour into a bigger container. Let it set in the freezer for 15 min.
    4. In the meantime melt your raw chocolate/dark chocolate chips with almond milk. Take out of the freezer and pour the melted chocolate on the top and by using a fork make a criss cross pattern. Place in the fridge until set and enjoy.

    These are heavenly, uber chocolatey and so highly addictive. Even though all ingredients are healthy and good for you this treat should be eaten in moderation. If you are counting your macros, just skip the chocolate topping and make it without it.
