You can never have enough recipes for clean energy balls! But what you can have enough of, is clean energy balls made with loads of expensive ingredients.
Today I am sharing with you my simple recipe which contains 3 ingredients - dates, ground nuts (whichever you have in your cupboard) and desiccated coconut. Yep that is it and actually you can even skip the nuts if you are allergic and just use the dates and coconut, you will just have to work a tiny bit harder to create the ball shapes.
I know many of you will say that Medjool dates have a lot of sugar. Yes they do, but they contain no fat or cholesterol and they are a great source of fibre and pack in all the essential minerals such as potassium, magnesium, copper, and manganese. They do have a lot of fruit sugar, but unlike any other snack with refined sugars (and a dozen or more unpronounceable ingredients), Medjool dates are a whole fruit which are digested by your body slowly, which in turn means more energy to help you keep going throughout the day. Also remember these energy balls are meant to be a good clean alternative to the usual unhealthy and caloric desserts, not something which you will be eating every day at 9 pm while watching Eastenders. Moderation, my dear friends, eat in moderation! Tip for all of you runners out there, when I used to train for my marathon run , a nice Medjool date every 3 miles kept me going and it certainly kept my runs more interesting, so try it.
Here's the clean energy balls recipe
- 2 cups medjool dates, pitted and soaked for 5 min in hot water
- ¼ cup ground hazelnuts or any other nuts (this is optional)
- 2 tbsp desiccated coconut + extra for coating
- Put the soaked dates in your food processor together with the ground hazelnuts and desiccated coconut. Pulse a few times, scrape the sides of the processor and process for another 2 - 3 minutes until you have formed a paste.
- Next roll the balls. You might have to wet your hands because the date paste will be extremely sticky (if you are cursing me now, please trust me it will be all worth it in the end)
- Once you have made the balls, roll them in desiccated coconut.
- Pop the finished balls into the fridge to set for an hour, or if you can’t wait put them in the freezer for 15-20 min
