Cauliflower is the latest “superfood”. It truly is a superfood, it has amazing benefits such as vitamin C,K and B and it’s also rich in potassium, manganese, protein, but low in carbs and fats. Best of all, we all know about it, and you can get it for just a few pennies in almost any shop or supermarket all year around. I love it raw in my salads, or roasted with a bit of salsa, my other half loves cauliflower rice, cauliflower buns, pizza and much more.
However some of my fussy family members (the younger ones mainly) don’t like the taste……and it also tends to make them a bit gassy (TMI?). I had to improvise and come up with a low carb broccoli pizza instead and boy it was lovely, so here I am sharing the recipe (a really simple one) for my low carb broccoli pizza.
This is the perfect dish if you are cutting down on your grains and trying to incorporate more gluten free meals into your food diary. Don’t think broccoli is anything less than cauliflower, it is as superfoody as cauliflower. It is high in fiber, vitamin C, B6 and vitamin A as well as magnesium, phosphorus, zinc and iron. I also think it adds a bit more flavour to the base and fills you up for longer.

Low carb broccoli pizza
If cauliflower pizza doesn't tickle your fancy, give a go to my low carb broccoli pizza recipe instead! Easy, tasty and quick.
Ingredients
- 1 Broccoli head
- ½ cup ground almonds
- 2 eggs ( for a vegan version use chia egg or flax seed egg)
- Sprinkle of garlic powder or onion powder
- Salt and pepper
- Optional: ¼ cup shredded mozzarella or extra ground almonds if the dough is too watery
Instructions
- Preheat oven to 200 degrees and line your baking tray with baking paper.
- Start by breaking or cutting the broccoli head
- Next grind up the broccoli in your food processor (squeeze water out if too wet) and then add in the eggs, ground almonds, garlic powder, freshly ground pepper, and salt.
- If you want to improve the flavour even more add some grated parmesan cheese.
- Once all is well combined, form the mixture into a pizza base shape on the prepared baking tray. Bake for 30 minutes, or until the edges are brown .
- Remove from the oven, and top with whatever toppings you'd like, then return to the oven for another 10 minutes and bake until melted , bubbly and yummy looking.
- Remove from the oven and let it cool down for a few minutes before cutting it up.
Just a few tips for the toppings. If you are bored of tomato sauce, put a layer of green or red pesto instead or mix a handful of cherry tomatoes with a handful of sun-dried tomatoes in a food processor and then spread on the crust.

Hello Kim, how about seeds, can he/she have seeds? If so I would use shelled hemp seeds or any other ground seeds. You could even try mozzarella cheese 🙂 Hedi xxx

just wondering... If I were to make a few of the bases, would they keep in the fridge or freezer? Do they reheat well? I like to do food prep at the weekend so that I can just come home and pull out something from the fridge.

I have never tried Janine. I think this could work as long as you squeeze all the water out of the broccoli to ensure the base is well stuck together. Hedi xx
