I don't know what is going on with me, but I am a bit obsessed with pumpkin flavour! It think it is all because of Pinterest! Have you been there lately? It is like a pumpkin bonanza with all these pancakes, biscuits, cakes, granola, bread,muffins, scones and many more tempting and great looking recipes. I have banned myself from it for a week! My cupboards are full of tins of pumpkin puree and if you come to my house you would think you have entered pumpkin mine field !
This granola is my take on pumpkin granola and I am pleased to say it is so yummy. I kept the brown rice syrup on the low side to make it an even healthier snack. It is not a crunchy one because of the pumpkin puree, but it is chewy, and fully of sweet pumpkin, cinnamon and spice flavours. Btw. I think granola doesn't have to be eaten only for breakfast. It is such a great snack for you and your kids too. And it can give you a nice energy boost after a workout, or just anytime you need a little pick me up to spice up your day. Don't forget to try my Super simple granola too!
Ingredients
2 ½ cups of gluten- free oats
⅓ cup of pumpkin puree
½ cup of pecans
½ cup of almonds
⅓ cup of pumpkin seeds
1 teaspoon of ground cinnamon
½ teaspoon of nutmeg
⅓ cup of brown rice syrup, honey or maple syrup
⅓ cup of melted coconut oil
2 tsps of vanilla extract
Method:
To get started, preheat oven to 160 degrees and line a baking tray with baking paper and set aside
Next, in a large bowl mix together oats, pecans, almonds, sunflower seeds, cinnamon and nutmeg
In a smaller bowl, add pumpkin puree, coconut oil, brown rice syrup, and vanilla extract. Whisk together until it is well combined. Now
Pour wet ingredients over dry ingredients and stir well making sure everything is covered. Now spread the granola out evenly across the entire baking tray and baked for around 30 mins. Don’t forget to check and stir every 10 minutes to make sure your granola does not burn and will brown evenly. Remove from oven and let cool and store in an airtight container.
Here is quick idea for your breakfast. Get a jar, put in some granola, top it up with white yogurt and top up with raspberries. Pop in the fridge overnight and in the morning enjoy and chow down!
