Hello you! Today I am sharing red cabbage and carrot salad with an insane peanut butter dressing.This combination is absolutely amazing!
When I think about making a quick and tasty lunch, my thoughts often turn to using Ryvita. As you know, I love eating them with any meal – at breakfast time with my Acai Berry Bowl or for dinner with my Creamy Pea and Basil Soup . So imagine how excited I was when they got in touch and asked me to be involved in their #MyVita campaign, especially when I heard about the brilliant prize that’s up for grabs.

Well, I love a challenge (and it was almost lunchtime!), so my creative juices were flowing. In no time at all, I topped a Cracked Black Pepper Ryvita with this red cabbage and carrot salad with a kickass peanut butter dressing finished off with a slice of orange and drizzled with some more peanut sauce. It tasted fresh and crunchy, and would be so easy to take to work with you if you put the topping in a separate container.

Recipe
Red Cabbage and Carrot Salad with a kickass peanut butter dressing
Red Cabbage and Carrot Salad with orange and dates served with a kickass peanut butter dressing
Ingredients
- ½ head of red cabbage, shredded
- 2 medium carrots, diced
- 2 small oranges, sliced
- 1 cup dates, cut into small chunks
- Peanut butter sauce
- 2 heaped tablespoon peanut butter
- juice from 1 lemon
- 2 tablespoon Tamari soya sauce
- 6 tablespoon of water
- salt and pepper
Instructions
- Mix all the salad ingredients together in a bowl and pop in the fridge for the flavour to mix
- In the meantime whisk all the ingredients for the peanut butter sauce.
- Serve in a bowl or on a ryvita crispbread with a slice of orange
