Oh yes, you heard it correctly.. sweet potato smoothie with lingonberry. Sweet potatoes in smoothies are the best thing ever..they add creaminess, texture and keep you satisfied for much longer than a usual smoothie. Attention all banana haters, this smoothie contains no banana, I said NO BANANA SMOOTHIE so give this one a try.
To make this sweet potato smoothie even creamer I added some cashew nut butter...pure bliss, have you tried cashew nut butter yet? Other ingredients are Provamel Almond drink and some frozen raspberries. If you don't have raspberries use blueberries. I am a huge berry fan because they come in so many different varieties and taste so sweet and succulent. My family and I do tend to eat them very quickly though, which was why I was excited to find Finnberry bilberry powder as it lasts much longer! When I heard that they also have something called lingonberry powder, I was very intrigued. Just like the bilberry powder, the wild lingonberries are handpicked from unpolluted Finnish forests and 900g of berries are made into 100g of powder. You can already imagine how wonderful the super concentrated taste will be.
On opening the packet, I was greeted by a gorgeously rich and vibrant deep red powder, which looked so inviting. The name didn’t give any clue about the flavour, so you know me, I just decided to dive in and taste for myself! I wish someone had caught my expression on camera, as Sofia told me that I pulled a very funny face. Remember when you were a child and used to eat those super sour sweets? That’s just what this lingonberry powder reminded me of, the lovely tang that you get on your tongue when you taste something both sweet and sour.
As a super berry, it has been used for hundreds of years and has lots of good stuff in it. Their website says that they’re full of antioxidants, vitamins E and K, minerals and polyphenols which all are beneficial to your health. Lingonberries have antioxidants that work to fight against the effects of harmful free radicals in the body including premature ageing, damage to healthy cells, elevated blood pressure and infertility. Also similar to cranberries, lingonberries help to reduce the risk of urinary tract infections.
Sweet potato smoothie with lingonberry recipe
As you’d expect from berries, this is a great clean ingredient for those of you who like to eat vegan, dairy-free, gluten-free and soya-free. Because the taste is so strong, a whole packet of powder will last you a very long time, and there’s no worries about it turning into mushy fruit! I’d pair this in recipes that have other sweet ingredients in them so that you get the wonderful mix of sweet and sour in each bite. It’s easy to add to smoothies, yoghurt, pancakes, energy balls and so much more. If you love this kind of tangy taste, there’s no need to visit the sweet shop and buy those sugary fizzy jellies anymore, just add a touch of lingonberry magic!
