Yes, finally clean eating blueberry muffins on my blog! You have been asking for a muffin recipe for ages, so here it is. As usual these muffins are very easy, Â very tasty and only a few ingredients.
Blueberries are my favourite berries, not only because they taste delicious and are full of antioxidants but also because they remind me of my childhood. I used to go every summer blueberry picking with my mummy in the woods. To be honest there was always more blueberries in my mouth and belly then in the basket, but whatever we managed to bring home my mum would make a blueberry cake or let me eat them with some icing sugar.

What I love about these clean eating blueberry muffins is that they are literally a chuck it all in recipe, pour batter in the muffin cases, bake and devour. 35 mins from taking a packet of blueberries out of the fridge to munching on one.

Recipe
Clean eating blueberry muffins
Ingredients
- 2 cups spelt flour
- 2 tsps baking powder
- ½ cup coconut sugar
- ½ cup coconut oil
- 2 chia eggs (normal eggs work too)
- ½ cup Provamel almond unsweetened milk
- 200 gr blueberries
- pinch of salt
Instructions
- Preheat oven to 200 degrees and grease your muffin cases
- Next get a bowl and mix the flour with baking powder and then add rest of the ingredients.
- Fold in the blueberries last and make sure you don't overmix them.
- Spoon the mixture into the muffin cases, filling them to just below the top.
- Place the muffin cases in the the oven and bake for 20-25 minutes or until the muffins are well risen and a toothpick inserted in the center of a muffin comes out clean.
- Let muffins cool in the cases for about 10 minutes before moving to a wire rack to fully cool.

I just having a couple of questions concerning the recipe. I am a little bit if a novice to clean eating and cooking. I am going to attempt to make but was wondering the reason for the low baking temp? I have never cooked a bread product at that low of a temp before. What kind of texture will the spelt flour give the muffin? Could whole wheat flour be substituted as an even exchange and still be considered clean? I am also thinking of my husband and daughter. If it has a weird texture they will be disinclined to eat. Thanks for your help!

What's a chia egg? And can you use it to substitute eggs in most baked dishes? Daughter intolerant to eggs.

Hello Gayle, yes chia egg is a replacement for usual egg. What you do is mix 1 tbsp of chia with 3 tbsp of water. You could also use flax seeds. Hope this helps lovely. Hedi xxx

Definitively not coconut flour because it requires more moisture. I would try with almond flour or possible oat flour, but that one can make them a bit more soggy. Hedi xxx
