I often get asked why have I created this blog? I had to think about it a few times. Among many reasons such as my passion for creating new recipes and inspiring people to eat healthy, the main one probably is coming up with treats that will not be bad for me, my family and of course you. This is the most challenging aspect of any diet or healthy eating plan. I think the best way is to take some of those favourite treats and try to healthify them. That way I won't feel like I am missing out. And today, it's popcorn!
Making your own popcorn is easy and much healthier than the shop-bought stuff from the bag. You can flavour your popcorn in plenty of ways. For today I picked up dark chocolate, crushed almonds and pink Himalayan salt for a bit of a sweet and salty kick. Before you start on me with “but chocolate is not healthy” let me tell you that dark chocolate is a real superfood, rich in antioxidants
Recipe ( serves loads)
Ingredients:
½ cup of popcorn kernels (I got one from Asda for £1.25)
2 tablespoons of raw coconut oil
A good pinch of pink Himalayan salt
¼ cup of dark chocolate chips
Handful of crushed almonds or any of your favourite nuts.
Method:
First get a big pot ready, the bigger the better. Heat up the coconut oil on a medium heat. Once completely melted, throw the kernels in along with the salt and mix well then pop the lid on. Leave on medium heat for around 5 minutes. Soon you should hear some big popping. In the meantime melt the dark chocolate chips. After 5 min remove the pot from the heat and leave to stand for a minute or so until the popping has finished. Transfer the popcorn into a bowl, drizzle with melted chocolate and sprinkle with crushed almonds. Give it a nice stir and enjoy. You could also put in the fridge to set and then take it as a healthy snack next day for work!
