We all need to switch off sometimes, so when an invite came into my inbox to join a bloggers meet at the stunning Life House Spa hotel, I immediately said yes.     I need to tell you a little bit about Life House Spa. First of all, no kiddies allowed! I love my kids dearly but there is no such thing as relaxing on holiday with them. It is all about them being hungry, bored, tired, hyper and there is literally zero me time. Life House Spa is heaven on earth for us mums, but also you professional lot who want to re-charge somewhere nice without loads of noise and families running around.Clean eating apricot energy balls recipe made with 4 ingredients.     Another great thing about spending time at Life House Spa is that you get to spend the whole stay in a fluffy bathrobe and slippers. Even in the restaurant! I mean you have to dress up a bit for dinner, but that is the only time. Everyone is so relaxed there and no wonder when you have over 90 different treatments to zone you out and bring some calm and peace to your life.     I nearly forgot to say that in the morning there is a hot lemon water waiting for you behind your room door.
    I also have to mention the food. It is incredible and caters for everyone whether you are gluten free, dairy free, vegan, vegetarian or flexitarian (the latest trendy name for someone who scoffs down anything).
    I spent 2 days and 1 night there and on the morning of the second day (after a hardcore fasted workout followed by delicious breakfast), I took a part in a lifestyle coaching session and a mindful meditation. After that, they brought around these apricot energy balls and smoothies. Boy, these balls are just blissful. They are perfectly sweet with a bit of zing. The Life House Spa chef was very kind and let me share this recipe for clean eating apricot energy balls with you.

    Apricots are one of nature’s own superfoods. Just make sure you get the un-sulphured ones if you can, as they are so much better for you because no chemicals are involved in the process. I get mine from here. Apricots are full of vitamin A, which is a good source of beta-carotene, and they also pack in fibre, potassium, vitamin C and minerals. I once read somewhere that in the 16th century they were regarded as an aphrodisiac… apricot smoothie anyone..?     Clean eating apricot energy balls recipe

    Yield: 12 balls
    Prep Time: 10 minutes
    Total Time: 10 minutes

    Ingredients

    • 150g walnuts
    • 155g dried apricots
    • 27g dried coconut
    • Juice of 1 lime or lemon (could add zest too for extra zing!)
    • 2 tbsp water
    • Optional: maple syrup to taste, but I don’t think it is needed

    Instructions

    1. Blend walnuts, apricots, coconut and lime in a food processor and pulse until everything is combined.
    2. Add water to help to bind together.
    3. Roll into walnut-sized balls and chill for 1 hour.
    4. Devour!
