How you look and feel is mostly down to your diet, so you have to eat properly.....and cleverly. Cut out the sugar, processed foods , saturated fats and create wholesome and tasty meals, which will make you happy from the inside and outside. Staples in any "healthy" kitchen such as grains, beans and legumes are essential and cous cous is one of them. It is so versatile and easy to make and is perfect in spicy dishes but also in sweet puddings and cakes.
1 ½ cups couscous
2 cups of hot vegetable stock (I used Kallo, because it contains zero nasty stuff)
½ cup of cranberries (go for unsweetened ones)
½ cup dried and sliced apricots (always unsulphured)
½ cup fresh mint leaves, chopped
½ cup of sliced almonds or for an even more Christmassy version go for pistachios
Pink Himalayan salt or sea salt to taste
Pepper to taste
For the dressing:
2 tsp apple cider vinegar
1 tbsp of olive oil
Juice and zest from 1 medium orange
zest of ½ an orange
1 tbsp of brown rice syrup or agave nectar
Put the couscous in a medium sized bowl. Make the stock and pour this over the couscous. Stir with a fork to combine then cover and set aside for 15 minutes so the couscous soaks up the liquid. In the meantime whisk all the dressing ingredients. After 15 min uncover and fluff again with a fork. Pour the dressing all over the cous cous and add cranberries, apricots, almonds and mint and stir to combine. Refrigerate for at least 30 minutes to allow flavours to absorb into cous cous. Add salt and pepper to taste......... enjoy!
