Yes, you heard me correctly, today I am sharing a healthier version of the ever so famous and very popular Krispy Kreme doughnuts my healthy chocolate doughnuts. You will find it hard to stop at just one of these delicious munchies which make a wonderful morning or afternoon treat. They are luxurious but not overly sweet and taste the best while the chocolate is still warm and a bit gooey. Let's not forget to mention the warm smell of spice and cinnamon wafting through your house while you're making them...
In this recipe I have used Braggs Organic Apple Cider Vinegar to give them more of a spicy and festive flavour. Apple Cider vinegar is known to help with weight loss, lower blood sugar levels and improve symptoms of diabetes. Did I mention these doughnuts are baked and not fried and are made with gluten-free flour? Now you will feel good about having more than just one, won't you?
1 cup Wholegrain Buckwheat Flour
¼ cup apple cider
¼ cup unsweetened apple sauce/puree (or mashed banana will work nicely too)
⅓ cup brown rice syrup or maple syrup
2-3 tbsp of unsweetened almond milk or any of your favourite milk
1 tbsp melted coconut oil
1 ½ tsp baking powder
½ tsp baking soda
2 tsp ground cinnamon
½ tsp nutmeg
¼ tsp allspice
½ tsp salt
1 tsp vanilla extract
Preheat the oven to 180 degrees and grease your doughnut tray (I bought this 6 Doughnut Silicone Moulds on Amazon for only £4.49 and it works great). Next get a bowl and mix the flour, baking powder, baking soda, salt and spices. In a separate bowl whisk together the apple cider, apple sauce, brown rice syrup, almond milk, coconut oil, and vanilla extract. Add the wet ingredients to the dry ones and mix until well combined. If the batter is a bit too dry add more almond milk. Get your well greased doughnut tray and either spoon or pipe the doughnut batter in until the individual mold is about ¾ full. The batter is very thick and can be a pain to spoon in, so use a piping bag if you have one. Bake for 12 -15 minutes or until slightly brown on the top. Remove from the oven and let it cool in the tray for a few minutes while making the chocolate sauce which is made with 4 squares of dark chocolate, or you can use dark chocolate chips and 1 tsp of coconut oil. When the chocolate is melted, drop in a doughnut, cover with chocolate and shake off the excess chocolate before placing on a tray or baking paper. Crush some walnuts and sprinkle on the top of the doughnuts. Enjoy loads and loads.
