Today is all about my super easy grain-free granola. Simple, easy, paleo, vegan, and beyond delicious. Healthy shouldn't be hard :-).
Who is into grain-free recipes? I sometimes get requests for them and have been experimenting a lot. Our house made grain-free granola is a weekend essential. Have you tried it yet? Perfect with coconut yoghurt, milk, or by the handful.
It is super simple. Basically it involves Snacking Essentials Nutty Mix (or any other mixed nuts), unsweetened coconut flaked coconut, sunflower seeds, cinnamon, maple syrup, coconut oil and vanilla extract. I was pleasantly surprised that it still clumps together perfectly and tastes just as amazing as oat-based granola. It's nutty, crunchy, sweet, delicious and so good for you too!
And if you are feeling fancy, you can even add in some chia seeds for an extra boost of nutrition...or you could toss in a handful of chocolate chips right after you take it out of the oven. Just saying 🙂
