I love Breakfast. It’s one of my favourite meals of the day; the thought of it is enough motivation to get me out of bed even on the coldest of days. And my perfect breakfast choice is just a super easy grain-free granola. It may seem a little simple and basic but there is just something so comforting about them. Plus, you can add lots of nutritious wholefoods so it keeps you full right through to lunchtime and can add in all your favourite ingredients such as nuts, dried fruits and seeds and pair it with your preferred milk or yoghurt product. I love pairing mine with a coconut plant-based yoghurt, my home-made oat milk or just by the handful as an afternoon snack or part of a trail-mix. The options are literally limitless. So this is the perfect recipe to let your creativity shine or use up any leftover products you have laying around.
Over the last few weeks I’ve had a lot of requests to make this grain-free granola, as I know a lot of you follow a plant-based, grain-free or paleo diet and you know how much I love my breakfasts - so it was a no-brainer. This granola is actually one of our family-favourites and something we have regularly on the weekends. I didn’t actually plan on making a grain-free granola, it’s just our usual preference and with the ingredients we keep in the house but I really do hope you love it as much as we do.
How Do You Make Grain-Free Granola?
It is super simple to make. Basically, it involves Snacking Essentials Nutty Mix (or any other mixed nuts of your choice), unsweetened coconut, flaked coconut, sunflower seeds, cinnamon, maple syrup, coconut oil and vanilla extract. It clumps together perfectly and has those nutty, crunchy and sweet notes that you would expect from any good oat-based granolas – I actually think this one tastes even better than the grain-based ones and has the added benefits of it being so good for you and easy on the gut, too. That’s a winner in my eyes.
And if you are feeling a little fancy, you could even add in some chia seeds for an extra boost of nutrition and fibre... or you could toss in a handful of dark chocolate chips right after you take it out of the oven, so they melt over the toasted nuts and create the ultimate breakfast treat for anyone with a sweet tooth.
Recipe
Super Easy Grain-Free Granola
Add a little crunch to your meals with this delicious grain-free granola. It’s loaded with nuts and seeds that are packed with healthy fats, protein and fibre and perfect for any time of the day.
Ingredients
- 2 packs (200g) Snacking Essentials Nutty Protein Mix
- ½ cup Snacking Essentials Pumpkin Seeds
- 2.5 cups flaked coconut
- ½ cup (100g) coconut oil, melted
- 1 teaspoon vanilla extract
- 2 tablespoon maple syrup or any other sweetener of your choice
- Pinch of salt
Instructions
- Preheat your oven to 170 Degrees Celsius and line a large baking tray with baking paper
- In a medium bowl mix all the ingredients together
- Spread the mixture evenly on the prepared baking tray and pop in the oven
- Bake for 20 minutes - use a spoon or spatula to break up the clumps every 5-7 minutes or so until golden brown
- Serve with your preferred choice of milk or yoghurt and fresh fruit
