TURMERIC FRIED RICE RECIPE

An easy vegan fried rice with turmeric that makes an excellent weeknight dinner, or the perfect side dish for a curry or stew.

Turmeric is such a wonderful spice. Not only does it give a cheery yellow colour to every dish you add it to, and an earthy, peppery flavour, but it also has fantastic nutritional benefits.

Delicious and healthy one-pot turmeric fried rice recipe that is easy, tasty, quick to prepare, feeds the whole family and is budget friendly.

INGREDIENTS – Cooked brown rice  – Frozen or fresh peas – Green pepper, sliced – Carrot, shredded/grated – Garlic cloves, crushed

INGREDIENTS

INSTRUCTIONS: 1. First, prepare your rice. If using brown, you'll need about 1 cup of uncooked rice to make 2 cups of cooked rice.

2. Once your rice is ready, melt coconut oil in a saucepan, then add onion and garlic and cook until softened.

3. Next add peas, carrot and green pepper and cook for about 3 minutes more. 4. Add in your rice and fry for a couple of minutes.

5. Stir in the soy/tamari sauce and mix well. 6. Add turmeric, mix again, taste and season with salt & pepper

7. Remove from the heat and serve sprinkled with fresh coriander, pine nuts, and a big squeeze of lemon.

NOTES Instead of tahini, you can use any nut or seed butter. Swap out pomegranates for cranberries or raisins.
