This low carb eggplant pizza is such a simple dish to make!

VEGAN EGGPLANT PIZZA

These vegan eggplant pizza bites with pesto hummus have become my absolute favourite mid-week lunch!

 1-2 Eggplants

Olive Oil

Cherry Tomatoes

Mushrooms

ROASTED EGGPLANT PIZZA INGREDIENTS!

  Fresh Basil

 Garlic

 Walnuts

 Lemon

INGREDIENTS! (For pesto hummus)

Salt & Pepper

Chickpeas

Water

Slice up Eggplant

Place the eggplant slices on the baking tray and brush with a little olive oil and add a pinch of salt

While the eggplant slices are roasting make the hummus pesto

Place all the ingredients in a blender or a food processor and process until smooth.

Take the aubergine slices out of the oven and top each with the pesto hummus, cherry tomatoes and mushrooms

Serve immediately with fresh basil and some freshly ground pepper

NOTE... You can add some grated cheese on top or olives and some fresh oregano
