– Aubergine, chopped into cubes – Dry red lentils – Olive oil – Garlic, minced – Cinnamon – Turmeric – Cumin

INGREDIENTS

INSTRUCTIONS: 1. In a large pan add the olive oil and minced garlic. 2. Next add cinnamon, turmeric and cumin.

3. Add cubed aubergine and fry until brown and softened 4. Finally pour in coconut milk, lemon juice and season with salt and pepper to taste.

5. Top up with loads of pomegranates, chilli flakes, chopped fresh coriander and some crushed nuts.
