VEGAN CHIA SEED CAKE WITH BERRIES

This chia cake is actually very easy to pull together.  It requires minimal hands-on time and no baking is required.

This recipe serves 6-8 and would be very welcomed at a brunch or summer dinner.

CHIA PUDDING INGREDIENTS chia seeds unsweetened almond milk tinned/canned coconut milk raspberries vanilla extract Pinch of salt CAKE CRUST INGREDIENTS nuts  dates coconut oil

INSTRUCTIONS

Combine all the ingredients in a blender or a food processor.

Pour in the raspberry and coconut mixture and whisk very well.

Pour in the chia mixture. Smooth the top of the cake and pop in the fridge

Decorate with fresh berries and serve immediately!

This vegan dessert will have to be kept in the fridge at all times, otherwise, it will start collapsing!
