    Quick and healthy Tagine

    The summer is definitely over, so my daily meals are switching from fresh salads to stews, curries, pasta and more. Today is all about my healthy and quick tagine.Healthy and quick tagine packed with veggies, spices and apricots .     For this recipe I have partnered up with Snacking Essentials, who have just launched their brand new range of products in The Food Warehouse. They have the following 8 flavours: Cashew Nuts, Almonds, Pitted Dates, Walnuts, Nut Selection, Spicy Snack Mix, Apricots and Chocolate Peanut and Raisin Mix.

    In this healthy and quick tagine I am using their apricots, to add that little touch of sweetness which works so well with all the vegetables. I like to keep this tagine portioned up in my freezer, so I've always got some ready if a quick lunch or dinner is needed.

    How do you make healthy and quick tagine?

    Healthy and Quick Tagine

    Yield: 2
    Prep Time: 5 minutes
    Cook Time: 30 minutes
    Total Time: 35 minutes

    Healthy and quick tagine packed with veggies, spices and apricots . Full of flavour, great texture and all done in one pot in 30 mins.

    Ingredients

    • 100g Snacking Essentials Apricots
    • 1 tin chickpeas, rinsed and drained
    • 1 tin chopped tomatoes
    • 300 ml vegetable stock
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 courgette, chopped
    • 1 carrot, chopped
    • 1 green pepper, chopped
    • 1 tsp cinnamon
    • 1 tsp cumin
    • ½ tsp turmeric
    • 1 tbsp olive oil
    • Fresh coriander

    Instructions

    1. Get a big pan/pot and fry the garlic and onions in olive oil until soft and translucent.
    2. Add the carrot and green pepper to the pot and fry for 2-3 minutes.
    3. Next add in the courgette, salt and all the spices and fry for a minute or until the spices become fragrant.
    4. Now add the dried apricots, tinned tomatoes, chickpeas, and vegetable stock
    5. Bring to boil, cover, and simmer for 20 minutes or until the vegetables are soft
    6. For the last 5 minutes take the lid off and cook for another 5 minutes to allow some of the liquid to evaporate.
    7. Taste and adjust seasoning
    8. Serve with cous-cous and loads of fresh coriander
