The summer is definitely over, so my daily meals are switching from fresh salads to stews, curries, pasta and more. Today is all about my healthy and quick tagine.
For this recipe I have partnered up with Snacking Essentials, who have just launched their brand new range of products in The Food Warehouse. They have the following 8 flavours: Cashew Nuts, Almonds, Pitted Dates, Walnuts, Nut Selection, Spicy Snack Mix, Apricots and Chocolate Peanut and Raisin Mix.
In this healthy and quick tagine I am using their apricots, to add that little touch of sweetness which works so well with all the vegetables. I like to keep this tagine portioned up in my freezer, so I've always got some ready if a quick lunch or dinner is needed.
