Made with crunchy cucumbers, colourful peppers, juice tomatoes, and protein- and fiber-rich chickpeas this will make a hearty vegan/vegetarian main, or you can serve it as an easy side salad.
EASY GREAK SALAD INGREDIENTS:
- Chickpeas - The star of this meal. I used tinned chickpeas, well rinsed and then drained.
- Cucumber: Finely diced (also peeled and/or seeded, if you prefer).
- Red onion: I like mine thinly sliced, but you can chopped it finely too. If you want to get rid off the strong flavour, rinse and drain the onion in running water. But if you don’t love them , feel free to omit them out or use sliced shallots.
- Fresh Parsley: I adore the burst of fresh parsley in this salad, which goes well with the dressing.
- Feta Cheese. One of the best cheeses. I used vegan feta cheese, but you can use any feta you like. If feta doesn't tickle your fancy, you can omit it and you are good to go
- Peppers: The more colours, the better, so go for red, yellow, orange or green
- Kalamata olives: I love black olives, and Sofia picked the pitted version for this Greek Salad recipe. But feel free to add in any other olives that you love the best, or capers would work well here too.
- Tomatoes: I added plump cherry tomatoes, but feel free to add in any other tomatoes that you love the best.
- Dressing: Lemon juice, olive oil, oregano, maple syrup, Dijon mustard and pinch of salt is all you’ll need, and it’s DELISH!
HOW TO MAKE EASY GREAK SALAD:
Here is a basic overview of how to make Greek salad! (Full detailed instructions are included the recipe box below, as always.)
- Chop all the vegetables. I like my salads nice and chunky, but any shape or size is good .
- Make the dressing. I usually just make my dressing in a small bowl or a jar, but you could use an immersion blender too.
- Toss the salad. In a large mixing bowl, combine all the veggies and feta and drizzle evenly with your desired amount of dressing, then toss until combined.
- Serve. Serve with freshly-cracked black pepper and loads of freshly chopped parsley...enjoy!
POSSIBLE VARIATIONS:
There are, of course, endless variations that you can make on this easy Greek salad recipe. For example, feel free to…
- Add protein. If you would like to make this easy Greek salad more filling try adding your favourite protein. I sometimes add baked tofu, stir in some cooked quinoa, pasta, or freekeh like I did in this Freekeh Salad.
- Bread. Add a good serving of delicious, crusty bread with this salad. I have a lovely homemade bread here.
- Add more greens: To make things even more healthier, you could add some greens in. Spinach, rocket or even kale would make great additions.
Make Ahead and Storage Tips
To Make Ahead. Add the dressing when you ready to serve and dress only what you plan to eat right away.
To Store. Store leftover, without the dressing in the fridge for up to 3 days. Keep any leftover dressing in an airtight jar for up to 5 days, and shake before serving.
