But before we get on to the recipe I would like to clarify something. Recently I had a couple of comments regarding this recipe and that it cannot be clean. The reason being because cacao butter is processed, brown rice syrup is processed, nut butters and raw cacao are also processed… but I disagree with this view to a certain point. Yes these are processed, but so is your chicken and meat you buy at the butchers, so are the apples you buy in supermarkets and so are the raw cashew nuts sold in health shops . Unless you take it straight off the tree or from the ground in your own garden, every single item you see in your supermarket has gone through some kind of process. Even cutting, washing and cooking your veggies is a process.

Not everyone is going to agree with me and that's fine. I get that not everyone has to agree on everything all of the time (what a boring world that would be).

Clean white chocolate cups with chocolate filling
Clean white chocolate cups with chocolate filling recipe from Hedi Hearts.
Ingredients
- For the cups:
- ½ cup or 110 gr cacao butter (the best one is Ecuadorian)
- 1 tablespoon maple syrup, brown rice syrup or date syrup
- 1 tablespoon protein powder (I used Sunwarrior vanilla, but you can use your favourite one)
- Pinch of salt
- Chocolate filling:
- 1 tablespoon of your favourite nut butter (I used cashew butter)
- 1 teaspoon raw cacao or cocoa powder
- 1 teaspoon maple syrup, brown rice or date syrup
Instructions
- For the cups:
- Get the cupcake molds ready, you will have to be quick now.
- Place the cacao butter into a heatproof bowl, place over a pan of hot water and allow the butter to melt.
- Once melted stir in the maple syrup and protein powder and mix well ensuring there are no lumps. Pour half of the mixture into your molds and place the molds into the freezer to set for a couple of minutes.
- Place the remaining melted butter back in the pot with hot water to make sure it doesn't harden.
- In the meantime mix peanut butter, cacao and maple syrup to create the chocolate filling
- Now, take the molds out of the freezer and divide the chocolate mixture equally into each mold. Pour over the remaining melted butter mixture and place in the fridge to set for an hour.
As I said eat in moderation, eat one piece and keep the rest in the freezer.
Much love,
Hedi
