These easy blueberry pancakes are made completely in a blender with no flour, no butter, no added sugar, and no added oil making them 100% whole grain and naturally gluten-free.
These are perfect to make with your little ones because the ingredients are simple, and kids can pop them in the blender themselves.
The grown-ups will have to oversee the use of the blender, the frying pan and give some guidance on pancake flipping.
How do you make blueberry pancakes from scratch?
You only need 4 ingredients, a blender or a food processor, and a frying pan. If need be, a touch of coconut oil, so the pancakes don't stick to your pan.
Before we get to the full recipe below, here are a few quick notes about the ingredients you will need to make these easy blueberry pancakes:
INGREDIENTS:
- Oats - Old-fashioned porridge (rolled) oats work the best. Or alternatively, you can use store-bought oat flour instead! As always, be sure to double-check that your oats are certified gluten-free if you need this recipe to be GF.
- Banana - Nice and ripe banana is a must. Don't use green bananas. This is also where your sweetness comes from so the riper the better
- Milk - I used unsweetened almond milk, but you can use any milk you have on hand or even make your own homemade oat milk
- Blueberries - Fresh is best, if they're in season.
- Optional add-ins: Feel free to add in some raisins (or dried cranberries or other chopped dried fruit), dark chocolate chips, and/or chopped nuts (pecans, walnuts, etc) too if you would like.
INSTRUCTIONS:
- Add the oats, banana, and almond milk to a blender or food processor.
- Blend until smooth.
- Fold in the blueberries and let sit for 5 minutes.
- Get a large non-stick pan and heat it up (if you need to, add a touch of coconut oil)
- Add roughly 2 tablespoons of the batter to the pan and cook for about 2 minutes or until holes appear, then flip it over and cook for another 2 minutes
- Repeat until all the batter is used up
- Serve with yogurt, maple syrup and extra blueberries
WHAT TO SERVE WITH EASY BLUEBERRY PANCAKES:
- Maple syrup: Of course ♡
- Ice Cream: My homemade vanilla ice cream is the best
- Nuts: Chopped pecans or walnuts are always a great addition to pancakes, either mixed in or sprinkled on top.
- Whipped cream: If you’re feeling decadent, add some of my coconut whipped cream
Storage Tips
- Store. Keep any leftover pancakes in the fridge in an airtight container for up to 3 days
- Reheat. Gently heat up pancakes in the microwave until hot.
- Freeze. Freeze the pancakes in a single layer in a zip bag

The batter should be thick, not runny or thin. If it seems to thin add 1 tablespoon of oats at a time to thicken it .
