When the lovely people from Pinterest asked me if I would like to spread the word about Comic Relief Red Nose day, I immediately said yes! They asked for something yummy, easy and colourful. This is where my clean eating Pavlova recipe was born and I am sharing it with you today, you lucky, lucky lot :o)

Clean eating Pavlova recipe
Ingredients
- 4 egg whites
- ⅓ cup xylitol
- 1 teaspoon cream of tartar
- 1 teaspoon apple cider vinegar
- White yoghurt of your choice (I used Tesco Soya)
- Fresh raspberries, strawberries and blueberries
- For berry sauce: ½ cup frozen berries, teaspoon maple syrup and splash of water
Instructions
- Preheat your oven to 150C/130C fan and line your baking tray with baking paper.
- Whisk the egg whites until they form stiff peaks and then whisk in the xylitol slowly by 1 tablespoon at a time.
- Next, whisk in the apple cider vinegar and cream of tartar.
- Get the prepared baking tray and using the egg white mixture, create a big circle with a small nest in the middle to put the berries in.
- Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside the oven.
- While it is cooling down, make the berry sauce by placing the berries, splash of water and maple syrup in a small pan. Let is simmer for 5 minutes until you get a sauce consistency.
- Spread a layer of yoghurt over the Pavlova, add all of the berries and then pour the berry sauce over it.
- Devour!
