It is definitely getting towards BBQ weather, so here is the perfect dish for your side table. I personally love this bowl of yumminess, it is spicy, filling and goes well with just about everything. It's a very simple and clean spicy brown rice recipe which can be customized to your taste buds. This is a delicious dish that has its roots in Mexican cooking, but if you use seasonal veggies it can be slightly different whenever you make it and whatever the time of the year.
You could swap black beans for chickpeas or broad beans, add a handful of spinach and a teaspoon of cumin. Don't be scared to experiment, you never know what you can come up with. I wouldn't swap brown rice for white rice though , because brown rice contains a good, healthy combination of important nutrients, including mineral, fibre and vitamin E which in return will provide you with bags of energy. Make this dish ahead and you can just reheat it when you want it. You can also freeze it, but the flavours of seasoning are often affected by the freezing process, so season it lightly before freezing, and before cooking too. Fresh herbs are the best and the healthiest.
Recipe
Mexican spicy brown rice
Mexican spicy brown rice dish is the perfect side dish for your barbecue or  main meal. Easy, delicious and super quick pleasing the whole family.
Ingredients
- 1 cup brown rice
- 2 cups Kallo stock
- 1 can red kidney beans, drained and rinsed
- 1 medium onion, diced
- 2 cloves crushed garlic
- 1 tablespoon paprika (the best is the smoked one)
- 1 teaspoon dried oregano
- 1 teaspoon spicy Cajun seasoning
- 1 small red chilli pepper (optional)
- Salt
- Black pepper
Instructions
- Start by cooking the rice, once cooked set aside and let it cool down.
- Heat coconut oil in a frying pan over a medium-high heat, add onion and garlic, stirring for 3 minutes or until the onion is softened. Add beans and cook for another 2 mins.
- Next add the cooled down rice and all the spices and cook for 5 more mins. Taste and season to taste with salt and freshly ground black pepper
- Serve scattered with thin slices of red chilli pepper
