Today is all about my healthy mushroom stroganoff recipe which is as delicious and creamy as the traditional meaty version. This is a low cost recipe using wholesome ingredients making it also low in fat and calories.
This dish is the perfect autumn dinner. It is vegan, gluten free, dairy free, nut free made with simple ingredients from your local supermarket. Old family favorite recipe reinvented for a modern, healthy, clean eating diet.
It's creamy, but you don't need to use any cream! Of course, the cream needs to be replaced with something else.
My favourite is coconut milk, or coconut cream. It makes it thick and delicious.
How do you make healthy mushroom stroganoff ?
It's so easy. You will need mushrooms. I have used classic button mushrooms, but don't be shy to experiment.
Try combination of button mushrooms with some juicy portobello's or add in a handful of dried Shiitake mushrooms, which will make this healthy mushroom stroganoff extra rich and comforting. Next you will need onion, garlic, smoked paprika, Dijon mustard, white yoghurt of your choice, veggie stock, freshly chopped parsley and a handful of slightly roasted cashews from Snacking Essentials. Their cashews are very creamy, sweet and crunchy with nothing added.
What to Serve with Healthy Mushroom Stroganoff
- Potatoes. Pair the stroganoff with these super cute and tasty Hasselback potatoes
- Mash.A side of my Sweet Potato Mash would be tasty with this dish.
- Bread. Soak up the sauce with a side of my homemade bread.
