Carrot and poppy seed cookies
Moist, simple and made with only natural sugars are these clean eating carrot and poppy seed cookies.
Ingredients
- 1 cup shredded carrots
- ½ cup ground poppy seeds
- ½ cup oats
- 2 ripe bananas
- 1 teaspoon of baking powder
- 1 chia egg (1 tablespoon chia seeds + 3 tablespoon water, mix and let sit for 10 min)
- 1 flax seed egg (1 tablespoon ground flax seeds + 3 tablespoon water, mix and let sit for 10 min)
- (you can use 2 normal eggs instead if you prefer)
- ½ cup raisins (soak them in warm water for 15 min to make them more plump)
- 1 teaspoon cinnamon
- 1 tablespoon honey (optional)
Instructions
- Start by preheating your oven to 170 degrees and line your baking tray with baking paper
- Next mash up bananas in a bowl and add all the ingredients (apart from oats and baking powder which need to be mixed together before adding them to the mixture).
- Using a tablespoon, form cookies and place them on the baking tray
- Bake for 25 min and once done let them cool down completely before devouring
