Hello friends! These lovely little carrot and poppy seed cookies remind me of home (sniff sniff). If you don't know, I am originally from the Czech Republic, a lovely small country in the centre of Europe, and ground poppy seeds are a very popular ingredient in all sorts of special treats starting with poppy seed strudel (my mum makes the best!!!) poppy pastries filled with nuts and raisins and a drop of rum or poppy seed tarts topped with crumble.
Poppy seeds are so nice, but you have to get your hands on ground poppy seeds. I get mine from Asda and they add to your baking such a lovely flavour, texture and colour! On top of this they are full of minerals such as zinc, calcium and magnesium , they boast a good amount of fiber and help to lower your blood cholesterol levels. What powerful little things! In this recipe I have combined them with juicy carrots, bananas and plump raisins. You could add a bit of honey, but I opted out this time. This is an all-around great snack which even my super fussy children will eat, even requesting them to be included in their packed lunch and let me tell you, that means something!
Carrot and poppy seed cookies
Moist, simple and made with only natural sugars are these clean eating carrot and poppy seed cookies.
Ingredients
- 1 cup shredded carrots
- ½ cup ground poppy seeds
- ½ cup oats
- 2 ripe bananas
- 1 teaspoon of baking powder
- 1 chia egg (1 tablespoon chia seeds + 3 tablespoon water, mix and let sit for 10 min)
- 1 flax seed egg (1 tablespoon ground flax seeds + 3 tablespoon water, mix and let sit for 10 min)
- (you can use 2 normal eggs instead if you prefer)
- ½ cup raisins (soak them in warm water for 15 min to make them more plump)
- 1 teaspoon cinnamon
- 1 tablespoon honey (optional)
Instructions
- Start by preheating your oven to 170 degrees and line your baking tray with baking paper
- Next mash up bananas in a bowl and add all the ingredients (apart from oats and baking powder which need to be mixed together before adding them to the mixture).
- Using a tablespoon, form cookies and place them on the baking tray
- Bake for 25 min and once done let them cool down completely before devouring
