It is freezing out there! April can be such a crazy month when it comes to weather. Freezing cold in the morning and in the evening, yet sunny and gorgeous during the day. This where my clean eating spicy lentil soup comes in handy. It has a lovely spicy kick to get your body temperature rising, it is simple to make, only a few ingredients and filling too!
Clean eating spicy lentil soup recipe
I personally love all lentils, but the red ones are my favourite. They cook really fast and go slightly mushy, which makes the soup a bit more thicker. They are packed with fiber, protein, minerals and vitamins, yet still low in calories and almost no fat or cholesterol. This spicy lentil soup is also a great freezer filler…... life’s a lot easier when you can come home to a nutritious and comforting meal that just needs heating. Soup is good when you have a cold .It helps keep you hydrated, but also helps to speed up the movement of mucus through your nose which relieves congestion and makes you breath more freely! Let’s not forget ingredients such as chilli, garlic and turmeric helps to ease cold and flu symptoms too. One thing for sure ..it tastes way more better than cough syrup.

Clean eating spicy lentil soup recipe
Ingredients
- 100 gr red lentils (dry weight)
- 300 gr chopped carrots
- 100gr cherry tomatoes, cut in half
- 1 small onion, diced
- 1 -2 garlic cloves, crushed
- 2 pints of stock (Kallo is very good)
- 1 teaspoon cumin
- 1 teaspoon curry powder
- 1 teaspoon chilli powder
- 1 teaspoon turmeric
- Pinch of cinnamon
- Salt and pepper to taste
- Coconut oil for frying
- Fresh parsley
Instructions
- Rinse the lentils in cold water
- In a pan heat up a bit of coconut oil and add diced onion, garlic and carrots
- Fry for a couple of minutes and then add in the spices
- Next add lentils, tomatoes and pour in the stock
- Bring to a boil then simmer for 30 minutes or until the lentils are soft
- Taste and adjust seasoning
How simple and delicious. To serve, ladle into bowls, garnish with fresh parsley and serve with a slice of my homemade bread or couple of pittas.
