Hello, hello! I have posted a couple of photos of our family breakfast on my Facebook page this morning and you all loved my clean tortilla recipe made with spinach and eggs, so here I am sharing this "very complicated" recipe with you.
To be honest I am not sure if they are tortillas or pancakes, it depends how thick or thin you make them, but they are pretty good and so simple. I literally threw spinach, spelt flour, water and a pinch of salt in the blender and then gently fried them in the pan with a bit of coconut oil. You often ask me if clean eating is suitable for all the family. The answer is yes! Absolutely, 100%. Take these tortillas, they are so versatile, each family member can make their own filling or topping. If you can't find buckwheat flour, use wholewheat flour instead.
I had tomato and avocado cubes with a bit of lemon juice, salt and freshly ground pepper. You could also add nutritional yeast to get more "cheesy" flavour.
My little Sofia wanted simple scrambled eggs with a touch of chilli (she loves spicy food).
My partner opted for fried egg with a runny yolk and topped with smoked paprika, black pepper and a few shavings of parmesan cheese. You see, one recipe but 3 different variations. You could also served them with peanut butter and sliced bananas or strawberries. The choices are endless, so let the creative juices flow. Homemade tortillas are so much better than any bought ones, so make them if you can.

Recipe
Clean spinach tortillas
Clean tortilla recipe from Hedi Hearts. Made with spinach which takes no time to prepare and make. You can make them in advance and freeze for later.
Ingredients
- 1 cup spelt flour (you could also use quinoa flour)
- 1 and ¼ cup water
- 3 handfuls spinach
- salt
Instructions
- Start by blending the spinach with water. Make sure you create a smooth consistency.
- Next add flour and salt and combine all together
- Oil your pan lightly with coconut oil and pour in ¼ cup of the batter. Tilt the pan straight away around in a circle to spread evenly.
- Let it cook for about 2 minutes on the first side. As soon as small, light brown flecks start to appear flip it.
- Cook for about 1 minute on the second side.
- Remove from the heat. Repeat for the rest of the batch.
- Place your favourite filling on the top of the tortilla, wrap up and enjoy!

Hi these are amaze but I cannot flip them..sticking to my pan (using coc oil). what am i doing wrong? Mix luks perfect consistency. Even scrambled tortilla tastes great but luks awful.

Hello Karina, do you flip them once they have bubbles coming up? You should be able to flip them easily once you see the bubbles. Try it and let me know Hedi xxx

I love them too Amy, they are so easy to make and you can "stuff" them literally with anything. With regards to calories and carbs it is all good, nice complex carbs and the right amount of calories for breakfast or lunch so enjoy Hedi xxx

Hello Lois, yes, I think it should work nicely too, just make sure you only turn the tortilla once you can see the bubbles forming on the top of the pancake Hedi xx

I made these tonight using buckwheat flour...Oh. My. Goodness! They were delicious. I filled them with pesto, avocado, mushrooms, scrambled egg and crumbled feta. I will DEFINITELY be making these again. Thank you! 🙂

Hey Hedi... I've made these a few times now and continue to love them! Today I replaced the spinach with steamed and mashed broccoli. Again I used part buckwheat and part rice flour, and I filled them with butternut pumpkin puree, pesto and peas. Delicious! I'm so pleased they worked out ?

I made these last night using buckwheat flour. Oh. My. Goodness! They were delicious- filled with pesto, avocado, mushrooms, at egg and sprinkling of feta. Definitely making these again....SOON! 🙂
