Calling all lazy bakers! I have something for you today. Healthy almond banana muffins recipe that is all done in a blender.
That’s it. No cleaning up after, no major aftermath, just wash the blender while these delicious muffins are being baked.
It’s September, can you believe it?! I am sad because it means the summer is nearly gone, but I am very happy too because the KIDS ARE GOING BACK TO SCHOOL!!!

Back to my healthy almond banana muffins recipe which happens to be gluten free, dairy free and is sweetened with dates and bananas. These will make a brilliant school packed lunch treat or a lovely tasty breakfast on the go. Imagine tucking into these on the train to work! Your fellow commuters would be green with envy.
If you want to make it taste a little different, substitute almond butter with peanut butter, hazelnut or cashew butter. HEAVEN in your mouth.

Healthy almond banana muffins recipe
Ingredients
- 2 ripe bananas
- 2 cups ground almonds
- 1 cup dates
- ½ cup oats
- 3 eggs
- 1 tablespoon almond butter
- 1 tablespoon coconut oil
- 1 teaspoon baking powder
Instructions
- First, preheat your oven to 180°C.
- Next, add all of the ingredients into a blender and blitz until you have a smooth consistency.
- Fill the muffin tins with this mixture, top with a slice of banana and pop into the oven for about 35 minutes.
- Let them cool then serve!

Can you use flaxseed eggs instead of egg....I don't always like using a prebought egg substitute. My 19month old boy has many allergies,egg being one of them. Your web site has been great in letting him enjoy foods with everyone without compromising on taste and texture. Thanks Amber

Yes you can lovely. I cant eat eggs either, so use either flax seeds or chia seeds egg. Hedi x x x
